After taking one look at the pictures, I’m sure you are asking yourself the title question. I know, I know. The kids even pointed out that it was not summer anymore, but that didn’t stop them from eating these!

 

 

 

 

 

 

People always talk about making popsicles at home, but I never have because I didn’t have the molds. We tried Pudding Pops once using Dixie cups that you just peel off, and they turned out okay. The only ice cube trays I have are shallow and don’t really hold much. So, when I found a mold on clearance for $2 a couple of weeks ago, I picked it up (It makes 4 popsicles–perfect for our family).

I wanted a semi-healthy recipe, and this one couldn’t be healthier! I simply mixed my own homemade, non-sweetened yogurt with V8 Fusion juice (Strawberry Banana flavor, but any of their juices would taste great). Since it was my first time, I was eyeballing the ingredients, but I would say it was probably about equal parts. I used four big spoonfuls of yogurt, then added juice until the consistency was like a runny smoothie. Then I filled up the cups and froze overnight. I added no extra sugar or sweetener. And because it was V8 Fusion, they were getting fruits and veggies. Pretty healthy, huh?

Anyway, they enjoyed them at lunch time, and everyone but Elsie ate the entire thing. I also noticed that they didn’t drip very much. See the mess on Grant? This would have been 3 times as bad if we were using regular popsicles! The girls were able to eat theirs without making a mess at all.
