Company Dinners: Baked Potatoes

 

Have you ever been to McAllister’s Deli? I love eating there, not only because of their yummy sweet tea, but also because of their baked potatoes. Today’s Company Dinners recipe was inspired by a trip to McAllisters. My favorite there is the “Spud Ole”, which is a large baked potato cut open and loaded with chili, cheese and sour cream (jalepenos too, but I omit those). They also have a potato built like a club sandwich with meat and cheese. They have veggie potatoes, steak potatoes, plain potatoes, whatever you want!

This is very similar to the build your own burrito I posted about last week in that everything is optional. I decided when serving this to company to provide the baked potatoes and a few toppings, then asked the guests to bring their favorite toppings. Here are some options:

  • cheese
  • sour cream
  • butter
  • chili
  • broccoli
  • homemade cheese sauce
  • chopped ham
  • bacon
  • chives
  • salsa
